Preserving lemons is an age-old art and technique. The fermentation process eliminates the sour, bitterness of fresh lemons– leaving only a sweet citrus flavor.
The whole lemon can be used directly from the brine for marinades or stews, using the salty rind and pulp as seasoning to flavor your dish. The lemons can also be washed before using to remove surface salt, then slice, chop or mince the rind as needed to garnish.
